Vanilla Cupcakes

These sweet and moist vanilla cupcakes are the perfect party treat. Use the batter for cupcakes or pour into a sheet tray and bake as a cake.


For the cupcakes

  • 625 ml self-raising flour sifted
  • 375 ml sugar
  • 5 ml salt
  • 250 ml milk
  • 120 ml oil
  • 5 ml vanilla essence
  • 2 large eggs
  • 250 ml water

For the icing

  • 250 ml butter
  • 500 ml icing sugar
  • 5 ml vanilla essence
  • 45 ml milk


  • Preheat the oven to 180°C and prepare a muffin tray with cupcake cases.
  • Combine the flour, sugar and salt in a bowl and set aside.
  • Whisk together the eggs, milk, oil and vanilla essence.
  • Add the wet ingredients to the dry ingredients and mix until well combined, then add the water. Note that the batter will be runny.
  • Fill the cupcake cases halfway with batter and bake for 25 - 30 minutes or until a toothpick comes out clean.
  • Remove the cupcakes from the tray and allow to cool completely.
  • For the icing, combine all the ingredients and beat until smooth.
  • Pipe or spread the icing onto the cool cupcakes and decorate as desired.
