SIMPLY DELICIOUS TRADITIONAL PUMPKIN FRITTERS!

INGREDIENTS
For the fritters:
1 cup pumpkin (cooked and mashed)
1 cup flour (sifted)
2 tbs sugar
2 tsp baking powder
1 large TopLay egg
1 tsp salt
1/4 cup milk
oil for frying
For coating:
100 ml sugar
1 tbs cinnamon
INSTRUCTIONS

In a bowl, mix together the pumpkin, egg, milk, baking powder and sugar until well combined.
- Fold in the flour until you have a smooth batter.
- In a pan, heat your oil over medium heat, enough to shallow fry the fritters.

Spoon the batter into the oil using a dishing spoon and shallow fry until the fritters are brown on both sides and cooked in the centre.
- Once cooked, dip the fritters into the cinnamon sugar and drain on paper towel.
