Cheesy Corn Fritters
Whip up these quick and easy corn fritters as a light lunch or satisfactory side. They’re great served straight from the pan and even better the next day.
Ingredients
- 250 ml all purpose flour
- 3 ml salt
- 5 ml black pepper
- 5 ml baking powder
- 15 ml sugar
- 125 ml cheese grated
- 1 tin whole kernel corn
- 1 tin creamed sweet corn
- 2 large eggs
- 30 ml oil
- 1 spring onion chopped
- Oil for frying
Instructions
- Sift the flour and baking powder, then add the cheese, salt, sugar and pepper.
- Mix together the two tins of corn, chopped spring onion, eggs and oil.
- Add the wet ingredients to the flour mixture and mix until well combined.
- Heat the oil in a pan over a medium high heat and place spoonfuls of the batter in the oil. Fry for about 3min or until the bottom is golden brown, then flip with a spatula and fry the other side. Keep on fryingthe corn fritters and flip them regularly.
- Once the corn fritters are cooked through, drain them on paper towel before serving.
