INGREDIENTS

For the fritters:
1 cup pumpkin (cooked and mashed)
1 cup flour (sifted)
2 tbs sugar
2 tsp baking powder
1 large TopLay egg
1 tsp salt
1/4 cup milk
oil for frying

For coating:
100 ml sugar
1 tbs cinnamon

  1. In a bowl, mix together the pumpkin, egg, milk, baking powder and sugar until well combined.
  2. Fold in the flour until you have a smooth batter.
  3. In a pan, heat your oil over medium heat, enough to shallow fry the fritters.
  4. Spoon the batter into the oil using a dishing spoon and shallow fry until the fritters are brown on both sides and cooked in the centre.
  5. Once cooked, dip the fritters into the cinnamon sugar and drain on paper towel.
