Malva Pudding is one of those quintessential traditional South African desserts — and it’s not that hard to make!

Ingredients

For the Pudding

  • 30ml (2 tbsp) Butter/Margarine
  • 125ml White Sugar
  • 1 Extra Large Egg
  • 15ml (1 tbsp) Apricot Jam
  • 5 ml (1 tsp) Bicarbonate of Soda
  • 125ml (½ cup) Milk
  • 250ml (1 cup) Cake Flour
  • Pinch of Salt
  • 15ml (1 tbsp) Vinegar

For the Sauce

  • 125g Butter/Margarine
  • 185 ml (¾ cup) White Sugar
  • 65ml (¼ cup) Water
  • 185 ml (¾ cup) Cream
  • 5ml (1 tsp) Vanilla essence

Method

Step 1

Preheat oven to 180°C. Spray a 20 cm square pan with vegetable spray. In a large bowl, cream butter and sugar together, beat in the egg until light and fluffy. Beat in apricot jam

Step 2
Disolve the bicarbonate of soda in the milk. Sift the flour and salt together and add to the egg mixture alternately with the milk. Stir in the vinegar.
Step 3

Pour into an oven proof dish and bake for 1 hour at 180ºC.

Step 4
Bring the butter, sugar and water to the boil and simmer while stirring continuously. Remove from the stove and add the cream and vanilla.
Step 5

Pour over the baked pudding and enjoy!
