Cheesy Corn Fritters

Whip up these quick and easy corn fritters as a light lunch or satisfactory side. 
They’re great served straight from the pan and even better the next day.


  • 250 ml all purpose flour
  • 3 ml salt
  • 5 ml black pepper
  • 5 ml baking powder
  • 15 ml sugar
  • 125 ml cheese grated
  • 1 tin whole kernel corn
  • 1 tin creamed sweet corn
  • 2 large eggs
  • 30 ml oil
  • 1 spring onion chopped
  • Oil for frying


  • Sift the flour and baking powder, then add the cheese, salt, sugar and pepper.
  • Mix together the two tins of corn, chopped spring onion, eggs and oil.
  • Add the wet ingredients to the flour mixture and mix until well combined.
  • Heat the oil in a pan over a medium high heat and place spoonfuls of the batter in the oil. Fry for about 3min or until the bottom is golden brown, then flip with a spatula and fry the other side. Keep on fryingthe corn fritters and flip them regularly.
  • Once the corn fritters are cooked through, drain them on paper towel before serving.
