Ingredients

  • 2 cups (500 ml) whole wheat or all-purpose flour
  • 2/3 cup (150 ml) brown sugar, packed
  • 1 tbsp (15 ml) baking powder
  • 1/2 (2 ml) tsp salt
  • 1 tbsp (15 ml) grated orange rind
  • 1 1/2 cups (375 ml) shredded Swiss cheese
  • 1 1/2 cups (375 ml) fresh or frozen blueberries
  • 2 eggs
  • 1 cup (250 ml) milk
  • 1/4 cup (50 ml) melted butter
  • 1 tsp (5 ml) vanilla essence

Method

Step 1

In a large bowl, combine flour, brown sugar, baking powder, salt and orange rind. Mix well.

Step 2

Stir in cheese and blueberries. Beat together eggs, milk, butter and vanilla. Pour over dry ingredients and stir just until moistened.

Step 3

Spoon into large greased or paper-lined muffin tins, filling them 3/4 full.

Step 4

Bake in a 190° C oven for 20 to 25 minutes or until golden brown and firm to the touch. Let stand 5 minutes before turning out onto rack. Serve warm or cold.
