INGREDIENTS
300 ml of flour
15 ml baking powder
10 ml sugar
2.5 ml salt
30 ml oil
250 ml milk
1 large TopLay egg
200 g blueberries

INSTRUCTIONS

TopLay | Blueberry Flapjacks
  1. Sift the flour, baking powder, sugar, and salt into a mixing bowl.
  2. In a separate bowl, whisk together the egg, milk, and oil.
  3. Mix together the wet and dry ingredients until well combined, then fold in the blueberries.
  4. Grease a pan and spoon the batter into it. One flapjack should be about 60ml of batter.
  5. Cook the flapjacks over a medium heat until bubbles start to form, then flip them to cook the other side. They are ready when the flapjacks are golden brown on each side.
  6. Serve hot with butter and syrup.
