Toplay Red Velvet Mug Cake

INGREDIENTS
For the mug cakes
180 ml self raising flour
125 ml sugar
15 ml cocoa powder
60 ml oil
90 ml milk
2 TopLay eggs
1/2 tsp lemon juice
1/2 tsp vanilla essence
1 tsp red food colouring

For the frosting
1 tbsp (heaped) cream cheese
1 tbsp (heaped) icing sugar
1/2 tsp lemon juice

INSTRUCTIONS

Toplay Red Velvet Mug Cake
  1. For the cake, combine the flour, sugar and cocoa in a bowl.
  2. In a separate bowl, whisk together the wet ingredients — oil, milk, eggs, vanilla, food colouring and lemon juice.
  3. Combine the wet ingredients with the dry ingredients and whisk until smooth.
  4. Grease two mugs and fill them halfway with batter. Microwave each mug cake on high heat for 2min or until cooked through.
  5. For the frosting — whisk together the icing sugar, cream cheese and lemon juice to form a paste. Spoon onto the cooled mug cake and enjoy!
