INDULGE WITH THESE EASY CARROT MUG CAKES!

INGREDIENTS
For the mug cakes
190 ml self-raising flour
125 ml sugar
2 TopLay eggs
90 ml milk
60 ml oil
1 carrot – grated
2 tsp mixed spice
handful of walnuts — chopped
For the frosting
1 tbsp (heaped) cream cheese
1 tbsp (heaped) icing sugar
1/2 tsp lemon juice
INSTRUCTIONS

Add the flour, sugar and spice to a bowl and combine.

In a separate bowl, whisk together the milk, oil, and eggs.

Add the wet ingredients to the dry ingredients and mix until well combined.

Set aside a table spoon of carrot to decorate. To the mixture, fold in the rest of the grated carrot and nuts.

Grease three mugs and spoon in the mixture until they are half of the way full.

Microwave on a high heat for 1 1/2 – 2 1/2 minutes until cooked.

For the frosting — whisk together the icing sugar, cream cheese and lemon juice to form a paste. Spoon onto the cooled mug cake, top with the grated carrot and enjoy!
