Sift the flour and baking powder, then add the cheese, salt, sugar and pepper.
Mix together the two tins of corn, chopped spring onion, eggs and oil.
Add the wet ingredients to the flour mixture and mix until well combined.
Heat the oil in a pan over a medium high heat and place spoonfuls of the batter in the oil. Fry for about 3min or until the bottom is golden brown, then flip with a spatula and fry the other side. Keep on fryingthe corn fritters and flip them regularly.
Once the corn fritters are cooked through, drain them on paper towel before serving.
