Preheat the oven to 180°C.
Soak the white bread in 125ml milk and set aside.
In a pan, sauté the onion and garlic, and add the mince.
Add the spices, salt and pepper and let it cook for 10min, stirring occasionally.
Add the rest of the ingredients, including the bread, and mix until well combined. Cook for a further 10min, stirring occasionally.
Whisk together the eggs and remaining milk, adding salt and pepper to tatse.
Transfer the bobotie to a baking dish and flatten the surface. Add the egg mixture and bay leaves on top.
Bake for 30-40min, or until the top is cooked.
